Once a song is unlocked, choose it from the Ocarina wheel and hold Use long enough to finish the performance. Each song does something different, from changing the weather to calling your horse.

How to learn songs
Use the corresponding Sheet Music item to unlock a song on that player. A newly acquired Ocarina of Time has Song of Time available immediately. A Fairy Ocarina can be crafted from three Clay and an Emerald.

Why is a song missing from my wheel?
The menu lists only songs that this player has unlocked and that the held instrument supports. The menu is available only while the Ocarina is in the main hand and no other screen is open. The key defaults to O and can be remapped.
